7-Up Cake

This pamphlet of “Unusual Old World and American Recipes” from Nordic Ware, 1960′s, would seem, from that title, to be filled with wonderful ethnic cakes and recipes. Not so much, but many of the recipes sound delicious. Now it was big in the 60′s to put pop in cakes and in Jellos, and I’ll bet this one is pretty tasty. I have made the Coca-Cola cake, which is also good.

7-Up Cake

1 1/2 cups butter

3 cups sugar

5 eggs

3 cups flour

2 Tbsp. lemon extract

3/4 cup 7-up

Cream sugar and butter together and beat until light and fluffy. Add eggs, one at a time, and beat well. Add flour. Beat in lemon extract and 7-up. Pour batter into well greased and floured Jumbo Fluted Mold (or bundt cake pan). Bake at 325F for 1 – 1/4 hours.
