Today is the King’s birthday. I received three copies of this cookbook when Kyle and I got married from folks who knew how much I like Elvis. To celebrate his birthday we usually eat fried chicken here and Peanut Butter and Banana Sandwiches.
If you haven’t had these, you are missing out. Now I’m not saying eat them in huge quantities, or refer to them as “peanut butter and ‘nanner sandwiches,” but you’ll enjoy these. We make these with whole-wheat bread, and use Pam to cook it.
1 small ripe banana
2 slices white bread
3 tablespoons peanut butter
2 tablespoons butter
1. In a small bowl, mash the banana with the back of a spoon.
2. Toast the bread lightly.
3. Spread the peanut butter on one piece of toast and the mashed banana on the other.
4. Fry the sandwich in melted butter until each side is golden brown. Cut diagonally and serve hot.
