Jello Drinks: Spicy Apple-cadabra

Another gem from my 1977 Amazing Magical Jell-O Desserts, featuring psychedelic art and the “Amazing Marvello” magic tricks. I’m enjoying looking through a favorite this morning after an amazing busy visit to the Romantic Times convention over the past few days. I love author events, and enjoyed meeting lots of favorites, but it was a crush and I am too used to my books and computers to be too comfortable with that many people for too long. I was in my bed within 90 minutes of getting home, though of course I woke up at 4:30 a.m. The people at RT always energize me and make me want to write, though. Plus I got to spend time with beloved colleagues like Nancy McCully, who mentored me into doing the vintage cookbook and crafts shows. Today I am gearing up for a big National Library Week party at the Schaumburg Twp. library where there will also be lots of people, but perhaps not 3000 like yesterday at the convention!

Is is just me or does this sound kind of good?

Spicy Apple-cadabra

1 package (3 oz.) Jell-O brand raspberry flavor gelatin

1 cup boiling water

1/4 cup cold water

1 cup applesauce

1/2 tsp. ground cinnamon

1 cup prepared Dream Whip whipped topping or thawed Birds Eye Cool Whip non-dairy whipped topping

Dissolve gelatin in boiling water; add cold water. Measure 1 cup of the gelatin, add applesauce and cinnamon. Spoon into 4 dessert glasses, chill 30 minutes. Chill remaining gelatin until slightly thickened, blend in whipped topping. Spoon over applesauce mixture in glasses. Garnish with apple wedges, if desired. Makes about 3 cups or 4 servings.
