Handwritten recipes are not always found on cards. This one is on the back of a cookbook a friend gave me. I already had that cookbook, but I liked hers better as it has this in the back cover and others as well. Plus it’s pie.
“Lemon Pineapple Cream Pie” (I’m not sure why it’s in quotes, but perhaps the writer found this recipe somewhere.)
1 2 oz. can crushed pineapple
1 3 3/4 oz. pkg. instant lemon pudding mix
1 2 oz. pkg. Dream Whip (look online for modern equivalents)
1 pie crust (graham cracker)
Stir together undrained pineapple & pudding mix. Prepare Dr. Whip according to directions. Fold D.W. into pineapple mix. Turn into crust and chill several hours.
I wonder if whip cream or baked meringue would work here. Still sounds yummy!
