Handwritten Recipe Wednesday: Carrot Cookies

A lovely person at one of my shows gave me a packet of handwritten recipes. All of them look good. This one had my interest. I’m pretty sure it sayd 350F for 10 – 15 minutes for cooking these.

Carrot Cookies

1 cup shortening

3/4 cup sugar

1 cup cooked mashed carrots

1 egg

1 1/4 cup flour

1 1/4 cup cake flour

1 t. vanilla

1/2 t. Baking Powder

Mix and drop by teaspoon in greased cookie sheet. Frost with orange icing:

2 1/2 cup powdered sugar

1 1/2 T melted butter

1 T grated orange peel

Hot orange juice (oh boy)

Who wants to try these? I do love carrot cake, but I’m just not sure about this one…

    I’m with you ladies. These do sound interesting, and for sure anything with a hint of vegetables should be healthy!
