Happy 2013 everyone! This is going to be a fun year. I have healthy eating on the brain like a lot of folks after the holidays. For example, last year I had a Cookie recipe calendar, and this year it’s a Cooking Light one. I found this salad recipe, but it is more like dessert, I think.
1 can orange and 1 can pineapple tidbits (Why not fresh orange at least?)
1 can small green grapes
Marshmallows – small
1 small package coconut
small amount of commercial sour cream (as opposed to?)
Hm. While lots of these elements are good for you, I think the marshmallows and sour cream ratchet up the calories and fat on this.

This reminds me of the classic “5-Cup” salad. One cup each of pineapple, mandarin oranges, coconut, sour cream and miniature marshmallows. It makes a lovely ambrosia, after the coconut and marshmallows tame the sour cream. Being so familiar with 5-Cup salad, the recipe above’s canned green grapes seem alien. Gosh, I’m just reflecting back on the years before produce was flown all over the world. Before you could buy virtually anything fresh, regardless of the season. Happy New Year, Amy!
