Handwritten Recipe Wednesday: Sour Cream Apple Pancakes

We are a bit buried in snow here but not as much as my friends in Kansas. More snow is coming, too. Owen and I baked banana chocolate chip muffins yesterday, but I think this recipe might be too much for me, even if I had the ingredients!

Sour Cream Apple Pancakes

Peel & thinly slice 2 firm tart apples & brown gently in 2T butter. Whisk together 1/4 c. milk, 2 T sour cream, 1/4 c. flour, 1/4 t. salt, + 2 egg yolks; fold in 2 egg whites, stiffly beaten. Arrange a fourth of apple slices with 1 t. butter on hot griddle or skillet at 375F & cover with a fourth of the batter. Fry until golden, turn carefully.

Sprinkle with sugar & keep warm until all are cooked. Serve with additional sour cream.
