Handwritten Recipe Wednesday: Swedish Apple Coffee Cake

This fell out of one of my church cookbooks and seems perfect for this time of year. The men and I went apple picking over the holiday weekend and then made apple dumplings. Yum! Maybe I will leave this recipe out and see what happens.

2 eggs

1 1/2 cups oil

1 tsp. salt

3 tablespoons cinnamon

1 can flake coconut

1 can comstock pie apples and juice

2 cups sugar

1 tsp. baking soda

3 cups all-purpose flour

1 cup nuts

1 tsp. vanilla

Beat eggs & sugar add oil & dry ingredients. Add vanilla, nuts & coconut. Dough will be thick. Add cup of apples & the juice. Mix well.

Bake in greased (9×13) pan in 325F degree oven for 1 hour and 15 minutes.

I like the addition of the coconut, but that is a lot of salt. Also, I’m not sure about the Comstock apples – does anyone use those anymore?
