Pineapple Cheese Parfaits “Cheesecake in a Parfait Glass”

One more recipe from the 1967 Better Homes and Gardens Jiffy Cooking, and this one actually looks good. This is from the dessert section.The caption for the recipe (no picture) indicates that it “tastes like cheesecake in a parfait glass.”

Pineapple Cheese Parfaits

1 2 3/4 oz. package vanilla custard mix (no-bake type) (I think pudding would work here.)

2 cups milk

2 3-oz. packages cream cheese, softened

1/2 tsp. vanilla

1 1-pound 5-oz. can pineapple pie filling

Prepare custard according to package directions using the milk. Remove from heat (or not if using pudding). Gradually stir hot mixture into cheese; mix well. Stir in vanilla. Chill custard and pie filling till serving time. When ready to serve, spoon alternate layers of mixture and pie filling into parfait glasses. Top with additional pie filling if desired. Serves 6 to 8.

This would likely work with apple pie filling, or pears, too. Likely it would also work with fruit. Still – all combinations sound good to me!
