Pineapple Beets

I have been a bit sporadic on here lately due to an asthma triggered illness last week. So I decided to start this week off with a truly odd vintage recipe. this is from my autographed 1964 copy of Buffet Party Recipes. I can’t imagine how this would taste or look. Likely it would be sweet.

1 tablespoon cornstarch

1/4 cup brown sugar (packed)

1/4 tsp. ginger

1/8 tsp. ground cloves

1/2 tsp. salt

1 tablespoon lemon juice or vinegar

1 stick (3 ins) cinnamon

1 can (13 1/2 ozs.) pineapple chunks, undrained

1 can or jar (1 lb.) cut beets, drained

In saucepan, mix cornstarch, brown sugar, ginger cloves, salt, and lemon juice. Add cinnamon and undrained pineapple. Cook and stir until thickened. Remove cinnamon. Add drained beets; stir gently and heat. Serve hot. Yield: 6 servings.

I wonder what color this one would turn out to be.

    Oh gag. I never thought about the color, let alone how terrible it would taste. Why are there so many strange recipes like this from the 50′s and 60′s? I do hope you are feeling much better and stay that way. Better not try this recipe or you’ll have a relapse!:)
